The cuisine of the Altiplano de Granada is a direct reflection of its landscape: rustic, honest, and shaped by centuries of tradition. Forget fussy, complicated dishes — this is food that warms the soul, designed to be shared and savoured.
The Holy Trinity: Must-Try Local Products
- Cordero Segureño (Segureño Lamb): the undisputed king of local cuisine, native to these high plains and holding protected geographical status (I.G.P.). Most famously grilled “a la brasa” with garlic and olive oil.
- Aceite de Oliva (Olive Oil): Andalusia is the world’s olive oil capital, and the groves around the Altiplano produce some exceptional extra virgin oils — look for Olibaza, a local producer worth seeking out.
- Embutidos (Cured Meats): chorizo, salchichón and morcilla from the local markets and butchers.
Dishes to Order & The Tapas Culture
Gurullos — a hearty stew with handmade pasta resembling rice grains, often cooked with game like partridge or rabbit. Migas — fried breadcrumbs served with chorizo, peppers and melon, perfect comfort food. And remember: in Granada province, the tapas tradition is sacred — order a drink and a small plate of food arrives with it, almost always complimentary.
Local Wine & Olive Oil Producers
The Altiplano’s high-altitude vineyards produce distinctive, mineral wines well worth a detour. Vilaplana is a local vineyard producing wines from the high plains around Baza, while the vineyards around Galera take advantage of the same altitude and clay soils that shape the region’s cave houses. For olive oil, Olibaza presses exceptional extra virgin oil from groves right across the Altiplano — a bottle makes the best souvenir of the trip.
